Decoding food names made easy

You know the feeling. You’ve browsed through a menu and picked something delicious sounding. The waiter’s said, “Excellent choice!”. You’re all smug. Until the order arrives – and it’s not what you wanted at all. You misread, misunderstood or just plain didn’t know what some new-fangled item would turn out to be. We’ve listed some common clunkers here. Read up. Decode the gobbledygook before you gobble up the wrong food. Bon appetit!


Edamame
Japanese soybeans,blanched salted or stir-fried and served as appetisers.

Mesclun Greens
A healthy mix of small salad leaves: lettuce, rocket, spinach, mustard greens, etc.

Taquitos
Essentially tacos + tortillas. Dig in!

Carpaccio
Thinly sliced fish or raw meat flavoured with salt, lemon, olive oil or ground pepper. Vegetarian versions are available locally but aren’t usually served in Italy.

Sliders
Mini gourmet burgers, usually four to a serving.

Vol-au-vent
Mini puff-pastry shells filled with intensely flavoured veggies, meat or sausage.

Gazpacho
Cold tomato soup. Yum!

Cheung fun
Thin, steamed, rice roll stuffed with chicken, mushrooms, pork or vegetables. It’s a delicate dim sum.

Empanadillas
Bread or pastries stuffed with meat, vegetables, fish or cheese, then baked or fried. Also called empanadas.

Rigatoni
Ribbed pasta, slightly bigger than penne.
Available at: Prego (The Westin, Goregaon), Fratelli Fresh (Renaissance Hotel, Powai), Spaghetti Kitchen (Malad)

Tortellini
Dumpling shaped like a little ring filled with meat or cheese. Generally served in chicken soup.

Couscous
Steamed semolina. It’s usually served with vegetable or meat stew.

Compote
Fruit cooked in sugar syrup and spices. Imagine a runny jam with fruit pieces.

Sencha
Japanese tea with a jade green colour and the fragrance of freshly-cut grass. Served hot or cold.

Palmiers
Sugar-dusted puff pastries shaped like a palm or a butterfly.

Crème Anglaise
Runny, vanilla-scented custard. Usually accompanies soufflé, fondant or poured as a sauce over fruits or cakes.

Shibazuke
Purple pickle made with eggplant and cucumber marinated in ume vinegar, and served as an accompaniment with curry and rice.

Sauerkraut
Finely cut sour cabbage used as topping in burgers and sandwiches.

Polenta
Finely ground cornmeal. Can be baked, grilled or eaten on its own. Usually cooked with cheese, herbs, meat or vegetables.

Pilaf
Rice cooked in flavoured broth, essentially a Central Asian pulao.

Sloppy joe
Minced chicken or beef, onions, tomato sauce and other seasonings in a hamburger bun.

Panna cotta
A custardy dish made from milk, sugar, cream and gelatin. Flavoured versions also available.

Coulis
Dense vegetable or fruit sauce, usually for pasta or desserts.

Financier
A small light rectangular French cake, full of crushed almonds.

Pavlova
A baked dessert with a crunchy crust and extremely soft centre. Topped with whipped cream and fresh fruits.

Ganache
A sauce made from chocolate and cream. Used as an icing, sauce or filling for desserts such as pastries.

Gianduja
Italian-style hazelnut chocolate; it’s very creamy.

Dulce de leche
A caramelised sauce made by heating sugared condensed milk. Commonly used to flavour ice creams.
