The Capital might be flooded with places offering authentic Italian, Thai and Chinese cuisines, but finding their desi counterparts is a task. One such is the Bundelkhandi cuisine from Madhya Pradesh. With a typical rural way (using stone ground herbs and homestyle cooking), this cuisine still includes special rice and wheat grown in the villages of Bundelkhand.

Machan, Taj Mahal hotel’s 24 hour coffee shop, brings some traditional preparations from the Taj Safari Kitchen. Ask for their special mocktail that come induced with ingredients such as amla, ashwagandha and jatmanasi, but do remember that these revitalisers alter the taste much.

The soups and main course offerings are delectable. The main course has four offerings, two for the vegetarians and two for lamb eaters. The menu will also help raise funds for the Kanha and Bandhavgarh National Parks.
