Almonds are not only rich in vitamins but also add a sumptuous touch to desserts. Apart from vitamin E, almonds are a good source of dietary fibre, fatty acids and proteins. In this edition, our expert chef whips up a quick and easy almond cake.
Moist almond cake

Preparation time: 40 mins
All-purpose flour: 150g
Unsalted butter: 250g
Caster sugar: 250g
Lemon juice: 1tbsp
Almond meal: 150g
Flaked almonds: 15-20g
Vanilla pod: One
Grease and line a loaf tin or use a loaf liner.
Cream together the butter and 180 to 200g of sugar, until light and fluffy.
Add in egg yolks, vanilla and lemon juice.
Sift the flour and fold it into the mixture.
Whisk the egg whites in a separate bowl with the remaining sugar, to form a stiff meringue.
Fold in the almond meal.
Now, combine both the butter mix and the meringue in parts.
Pour into a mould and bake at 180 degrees C for 30 to 40 mins, until a skewer comes out clean.
