Adraki Tandoori Champaen-Aloo jeera-Maa ki Daal

Chef Vineet Bhatia shares the recipe for Adraki Tandoori Champaen-Aloo jeera-Maa ki Daal.

Ingredients for Champaen:
8 to 3 bone lamb chops.
For first marinate
1 tbsp ginger paste
1 tbsp garlic paste
1 tsp lemon juice
For second marinate
1 cup thick yoghurt
1 inch grated ginger
1tsp coriander powder
1 tsp cumin powder
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp vegetable oil
1 tsp lemon juice
¼ tsp garam masala powder
Salt to taste

Method
Massage the lamb chops with the first marinate and leave it for 30 minutes. Now apply the second marinate, lightly fry them, and grill them in a pre-heated oven of of 175°C for 12 mins.

Ingredients for Aloo Jeera
½ kg potatoes, peeled, diced into 1 inch cubes
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp salt
2 tbsp vegetable oil
1 tsp chopped green chillies
Salt to taste
1 tsp lemon juice

Method
Boil the potatoes with turmeric powder, red chilli powder and salt. Now, fry them in a little oil with cumin seeds, green chillies and turmeric. Add salt and lemon to taste.

Ingredients for Maa Ki Daal
½ kg black daal (puree)
2 tbsp vegetable oil
1 tbsp cumin seeds
4 tbsp tomato puree
½ cup cream
½ tsp garam masala powder
½ tsp kasoori methi powder
2 tbsp butter

Method
Heat oil. Add cumin seeds and tomato puree on low heat. Now add the dal puree to the pan along with cream. Get the mixture to a boil. Add garam masala powder, kasoori methi and finally some butter and stir it well. Pour the Maa Ki Daal in a serving dish, top it with Aloo Jeera, and , serve the Champaen over it.
