For the cholesterol-conscious, separating yolks and egg whites is almost mandatory. But you can make quite a mess separating eggs if you are not used to it or do not use an egg separator. A simple kitchen tool, it is a quick and easy way to separate the yolk and the white without breaking the yolk.
Egg separators come in different shapes and sizes and use different materials but there are essentially two types - one with a round bowl with two slits on the sides to allow the whites to run out of the bottom and another with a mesh at the bottom.
The metal and plastic separators are easiest to find. The metal ones are available in aluminium and steel and are more sturdy. The plastic ones, on the other hand, though are more delicate, come in vibrant colours and shapes.
Clip it on
To use, simply clip the equipment on to one side of a bowl. The egg whites are drained through. Most egg separators are equipped with handles that allow the utensil to rest on the lip of a bowl, so it is not necessary to hold the egg separator while the egg is being divided.
There are some funky egg separators too in ceramic, shaped like a mugs. A cool gift for those who enjoy cooking, Just crack the egg, tilt the mug to around 45 degrees, the small slot mid-way strain the egg white. These ceramic mugs usually have a caricatured face drawn on it.
The design of metal egg separators is such that it takes very little effort to clean them. To get rid of the eggy smell, simply soak them in warm water with used tea leaves for 10-15 minutes and then wash with dish cleaning soap.
