Who’s the city’s top chef? As part of our quest, we are featuring five chefs — one every week — who are doing exciting things in Delhi kitchens. The American Express Chef of the Year winner will be announced on the night of the HT City Crystals People’s Choice Awards 2010.

When did you decide to be a chef?
Probably at age 12.

What influenced your decision?
My parents. I used to cook to surprise them, and the reaction and encouragement they gave was amazing.

Your favourite cuisine(s)
Bengali first, and then Japanese, followed by Italian.

Best dish you’ve ever made
Sweet Potato-crusted, Apple-Smoked Yellowtail with Fennel and Leek Stew, Mango Dashi Foam and Sea Urchin Caviar.

Worst dish you’ve made to date
A Jerk-style Tofu Pizza with Teriyaki Marinated Pear... it didn’t really work.

Favourite restaurant(s) in the world
elBulli, Spain.

Favourite restaurant(s) in Delhi
American Diner, Chor Bizarre, and Sidewok at Malcha Marg, Varq.

Favourite street food in Delhi
Kebabs at Jama Masjid, paranthas at Paranthe Wali Gali, UPSC Chaatwaala, Bengali sweets at Bengali market, Kathi Rolls at Khan Chacha.

What are the qualities of a great chef?

The insight to create dishes from the simplest of ingredients, and the ability to change and grow with time and trends.

Best compliment you’ve received

When I went to Calcutta and cooked my parents a seven-course meal for their 30th anniversary. They said that they were extremely happy that I’d become a chef, and that too, an excellent one.

Plans for the future
To be remembered as one of the best chefs known. Also, I’d like to work with Chef Ferran Adria before I die.
