On the occasion of Lohri, stack up on warm favourites, and go the traditional way. Makki ki roti
The dough is made of refined maize or ground corn flour. When you are kneading, add salt, and use hot water. You can also add grated radish. Now bake like a normal roti, but practice to master, as the flour tends to break when baked.
Take off the malai (cream) that settles atop as you boil milk and cool it. Now hand-beat the cream, add ice, and beat again. You’ll see fat gathering. Once water separates from the mix, you’ll have butter at disposal.
Rice laced with dry fruits and saffron serves as prasad on Lohri. As you boil the rice, add a desirable helping of sugar and honey. This dish is more gooey than plain rice, so you don’t have to wait till the water is absorbed completely. While the rice cooks, add milk (or coconut milk) and a saffron stick or strands. Now add roasted cashewnuts, raisins, cardamom, and almonds
and cook again for a few minutes.
