Known fondly as The Great American Dessert, ice-cream dates back to the time before Jesus Christ. In 4 BC, all that the Roman emperor Nero would want after a hard day of conquering, would be to hang up his sandals and eat a bowl-full of fruity ice. Today, ice-cream is arguably the most consumed dessert in the world, and extremely popular here in India too, thanks to our tropical climate.
Even so, people shy away from making ice-cream at home, simply because it's available too freely. But the process is easy, the ingredients readily available and the outcome delicious and completely worth it. With a little elbow grease, hand-made ice-cream (and frozen yoghurt, for the health conscious) can become your next summer project.
Chikoo Ice Cream
Ingredients: 1 cup sweetened condensed milk, 2/3 cup dry milk powder, 3/4 cup water, 1 cup chilled whipped cream, 1 1/2 cup chilled chikoo puree
Method: Combine milk powder and water, keep aside. In a blender, blend the milk powder and water mixture along with the chilled chikoo paste till smooth. In a large bowl combine chilled whipped cream, sweetened condensed milk and chikoo mixture. Mix well. Make sure you fold the mixture gently into the cream. Pour into a container and freeze for 5-6 hours.
Ingredients: 1 cup whole milk yoghurt, 1/2 cup whole milk, 5 tbsp sugar, 150 gms fruits such as mango, banana, litchi, grapes, apple, coffee, chickoo, strawberry, 3-3.5 tsp honey, pinch of salt.
Method: Place all of the above ingredients in a blender and blend until really smooth (2 mins), Place the smoothened mixture in a freezer-friendly bowl and cover it. Place this into the freezer for 45 minutes. After 45 minutes, whisk the mixture. Once again, place the mixture for freezing for 1 hr 15 mins. Whisk again and freeze again for 2 hours. After it has frozen, scoop out and garnish with the main fruit used.
