Salted caramel is predicted to have the biggest impact on the food and beverage industry in 2012, says a new report by Bell Flavours & Fragrances. The international company of flavourists and perfumists identified salty caramel as the flavour trend of the year next year. It’s not hard to see why the flavour combination topped their food trends report, given its fast-rising popularity in restaurants.
Coffee giant Starbucks, for instance, offers salted caramel mochas and hot chocolates, as well as salted caramel squares. British chef Nigella Lawson dedicated a full essay on her latest obsession with the sweet, salty caramel, even allowing herself to be slathered in the sauce for a cover of Stylist magazine, UK.
Korean, Cajun and Greek cuisine are likewise predicted to emerge as major food trends. The flavours of Cajun cuisine are predicted to become increasingly mainstream, while the health benefits of the Mediterranean diet are also driving growing interest in the flavours of the Greek diet.
