Kavita Bhatia takes a basic course for one day where she teaches eight to ten varieties of chocolates such as caramel, truffle and liquor chocolates. “We teach basic things that are very important, like what temperature to maintain, what fillings to use and how to mould the chocolate into different shapes,” she says. Bhatia teaches how to make milk chocolate, coffee chocolate, nut chocolate and chocolates with semi solid fillings such as jams and jellies.

Manju Mittal’s Cookery Classes
The classes here are divided into three levels - basic, advance and professional. A basic course is for beginners who are learning chocolate -making as a hobby. This includes making plain chocolates, nut chocolates and simple fillings. There’s also an advance course for those who are planning to take up this art as a profession. This includes advanced learnings such as sophisticated fillings like rum, lemon and fruits with flavours like truffle, coffee and mint. The professional course is for people who are working specifically in this industry. Here, they teach how to make stylised chocolates such as rum with coconut filling, bon bon and creamy layers, as well as proper gift packaging.

Savita Duggal, the owner, tells us that she takes only two students per class so that she can give personal and proper attention to her students. “Sometimes, I even take a single student if there is such a requirement,” says Duggal. They offer a basic course, as well as an advanced course in chocolate-making. While a basic course would teach you varieties like fruit and nut, coffee chocolate and coconut chocolate, an advanced course would help you to learn how to make truffle, rum and raisins and butter scotch. They also teach chocolate gift wrapping.

These range from basic flavours to premium flavours. “Ours is a very interactive class.
