Choco chip cookies
Ingredients (makes 3-4 dozen cookies):
1 cup butter, softened
1/2 cup white sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts
Directions:
1. Preheat the oven to 375 degrees F (190 degrees C).
2. In a large bowl, cream together the butter and sugar until smooth. Beat in the vanilla extract and eggs one at a time.
3. Combine the flour, baking soda and salt; stir into the sugar mixture.
4. Finally, mix in the chocolate chips and walnuts.
5. Drop by tablespoonfuls onto ungreased cookie sheets. Bake for 8-10 minutes or until edges are golden.
6. Remove from baking sheet to cool on wire racks.
Orange spice cookies
Ingredients (makes 60 cookies):
2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup softened butter
1 1/2 cups brown sugar
1 egg, beaten
1 cup chopped walnuts
1 cup chopped apples
1 cup raisins
Directions:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a medium bowl, sift together flour, baking soda, cinnamon, cloves, nutmeg, and salt. In a large mixing bowl, cream butter until light and fluffy. Mix in sugar and egg. Stir in flour mixture, and mix thoroughly. Fold in nuts, apples, and raisins.
3. Drop by rounded teaspoon onto prepared cookie sheets. Bake for 12 to 14 minutes. Cool on wire rack.
