1 large onion, chopped
1/2 cup butter or margarine
4 cups water
2 cups diced peeled potatoes
1 kg fresh or frozen cod fillets, cut into large chunks
3 tbsp lemon juice
2 cups milk
2 cans (350 ml) evaporated milk
2 1/2 tsp salt
2 tsp pepper
Chopped fresh parsley
1. In a pan or soup kettle, sauté onion in butter. Add water and bring to a boil. 2. Add potatoes; cook for 10 minutes.
3. Add fish and lemon juice; reduce heat and simmer for 10 minutes.
4. Add milk, evaporated milk, salt and pepper.
5. Garnish with parsley and serve piping-hot.
