Yesterday, March 25, was International Waffle Day. Våffeldagen, as the day is called in its country of origin, Sweden, marks the arrival of spring. In its honour, here’s a traditional recipe for this breakfast delicacy:
2 cups all-purpose flour
4 tsp baking powder
1/4 tsp salt
1 1/2 cups milk
6 tbsp vegetable oil
2 eggs, separated
1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in milk, oil and egg yolks until mixture is smooth.
2. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
3. Pour mix onto hot waffle iron. Cook until golden. Serve hot.
