A five-day training course on “Development of Value added Potato Products for Nutritional and Health Benefits” was organised at the Punjab Agricultural University (PAU) for self-help groups and entrepreneurs, here on Tuesday.
Around 30 trainees attended the course in which experts from different departments of PAU including food and nutrition, food science and technology and processing and food engineering imparted training to the participants.
PAU director of research SS Gosal said, “Potato is one of the most important crops of the world ranking next to rice, wheat and maize. It assumes greater significance for its ability to provide food security to millions of people across the globe.”
Gosal said potato is becoming increasingly important as it can be easily processed into various value-added products and there is a great marketing potential for potato-processed items.
“The processing of potatoes is vital to mitigate the seasonal glut and the higher post-harvest losses,” he added.
