5 medium blanched tomatoes 

3 Medium chopped onions 

10 cloves of garlic

250gms of Penne Pasta

1 cup of grated cottage cheese 

1 cup of grated cheese 

1 cup of cheese sauce

1 cup of blanched spinach

Salt to taste

A pinch of pepper

2 tbsp sunflower oil

1/4 cup of dry herbs and basil leaves

Boil Penne pasta till al dente with a little salt. Remove from hot water and keep it aside

For the pasta sauce, heat oil in a pan, add chopped onions and garlic (half the quantity mentioned), add blanched tomatoes, salt, basil , pepper, mix herbs and ¼ of fresh basil

Let it cook till the tomatoes are completely mashed and add grated cheese. Cool down and blend it till smooth

In another pan, heat oil, saute onions and garlic. Add blanched spinach, salt and saute it for a few minutes. Keep aside and let it cool

The Healthy Twist

Take a baking dish, grease it with some sunflower oil and layer the bottom with pasta sauce, then the pasta topped with spinach mixture. Repeat this layer 2 times

Add a layer of grated cottage cheese, grated cheese and a sprinkle of dry herbs. Repeat for every layer in the baking dish

Bake it at 135°C for 15 minutes till the top layer is gratinated. Garnish with basil leaves and serve with garlic bread
