Eggs (semi boiled)- 4
[Slit the eggs and marinate them in ¼ tsp turmeric powder]
Contd.
Water (warm)- 4 cups
Mustard Oil- 5-6 tbsp
Ginger Garlic Paste- 1 tbsp
Green chillies- 2
Tomato (diced)- 1
Potatoes (boiled and cut in four pieces)- 2 or 3
Onion (diced) – 2 medium
Ingredients
Cumin seeds- 2 tbsp
Sugar- 1-2 tbsp
Salt- 2 or 3 tbsp
Garam Masala (whole)- 1 cinnamon stick, 2 cardamoms, 2 cloves
Dried red chillies-2
Bay leaf-1
Cumin powder- 2 tbsp
Red chilli powder- 1 tbsp
Coriander powder-2 tbsp
Turmeric powder- 2 tbsp
Ingredients
Heat 2-3 tbsp of oil in a pan. Add the eggs in the oil and fry evenly till light brown. Add potatoes and fry till golden brown. Keep aside
Add another 2 tbsp of oil. Add whole garam masala, bay leaf and dried red chillies. Temper for few minutes. Add cumin seeds. Stir well
Add the onion and 1 tbsp of sugar. Fry until golden brown
Add the ginger garlic paste. Cook for 2 minutes
Mix coriander, cumin, red chilli and turmeric powder in a bowl with water to form a paste
Add the tomato and green chillies
Add 2 cups of water and cook for 4 min
Add the fried eggs and potatoes and mix them well with the gravy. If needed, add a cup of water and salt and sugar according to taste
Serve hot with rice or roti
