What are Smash Burgers taking over London?

The burgers are named so for their smashed-down patties that maximize the amount of charred meat in each bite. 

The burgers have made serious inroads since last autumn, when the Parisian brand Supernova launched a storefront in Soho, with lines forming down the block.

Soon, other restaurants in London also caught on the trend. Smash burgers are 'flying off the grill' everywhere. 

Smash burgers are made by pressing a ball of ground meat onto a hot griddle or flat-top, which creates a thin patty with a crispy, caramelized crust due to the Maillard reaction.

Because the patties are thin, they cook quickly, typically within a couple of minutes per side. This quick cooking locks in the juices while providing a flavorful exterior.

Common toppings for smash burgers include classic options like American cheese, lettuce, pickles, onions, and a basic sauce. The simplicity complements the rich flavor of the crispy patty.
