veg white sauce

Salt: 4 tbsps

Olive Oil: 2 tbsps

Butter: 3 tbsps

Garlic: 10-12 cloves

Onion: 1

Sweet corn: 50 gm

Carrot: Half (diced)

Bell Pepper: Half (diced)

Pasta: 200gm


Pasta Water: 1 cup

Chilli Flakes: 1 tsp

Oregano: 1 tsp

Cheese: 2-3 cubes

All purpose flour: 3 heaped tbsps

Milk: 500 ml

 For sauce: 

Boil the pasta in a pot of water with a pinch of salt for 10 to 15 minutes. Strain pasta and keep aside. Reserve a cup of boiled water

Heat up a non-stick pan, add 2 tbsps of oil, add garlic and sauté till brown

Add veggies and half a teaspoon salt and pepper. Sauté well, set aside

Add the butter and flour and keep stirring

Keep adding milk to the mixture until it gets a sauce-like consistency. Add half a cup of pasta water (optional)

Add oregano and chilli flakes and 1 tsp of salt

Add sautéed veggies and pasta, and stir. Grate a cube of cheese in it while stirring

Serve hot with extra seasoning and grated cheese
