Phirni is a classic dessert in Mughlai cuisine that needs no introduction. However, since it is traditionally prepared with dairy, people with lactose intolerance, or those who follow a vegan diet, have difficulty partaking in it.

With the festive season fast approaching, and Raksha Bandhan just around the corner, celebrity chef Sanjeev Kapoor shared an easy recipe that turns the dish vegan, using almond milk instead of whole milk.
The preparation time for the recipe is approximately an hour and a half, and the cooking time is around 30 minutes. The quantities listed below are meant for four servings. The detailed steps to make the dish are presented as follows.
Ingredients for almond phirni
- 3 cups Almond milk
- 4 tablespoons Rice, soaked for 30 minutes and drained
- A large pinch of Saffron (also, to garnish)
- 1/2 teaspoon Green cardamom powder
- 3/4 cup Jaggery, chopped
- 1/2 tablespoon Rose water
- Blanched pistachios, slivered (to garnish)
Method of preparation
- Heat almond milk in a deep non-stick pan and let it come to a boil. Reduce the heat and let it simmer for eight to ten minutes.
- Put rice in a blender jar, add half a cup of water and blend to a coarse paste.
- Add this paste to almond milk and mix well. Add a large pinch of saffron, mix well, and cook till the rice is cooked and the mixture thickens.
- Add green cardamom powder and mix well. Cook on low heat for three to four minutes, stirring constantly.
- Add jaggery and mix well. Cook till the jaggery is completely dissolved. Add rose water and mix well. Take the pan off the heat.
- Pour phirni into individual earthen bowls, sprinkle pistachio slivers on top and garnish with a few strands of saffron and serve chilled.
