Fusion is the most accommodating genres of them all, especially when it comes to food. Middle-class households have grown up on an unhealthy overdose of experimental food combinations, a trend that’s now prospering in commercial kitchens around the country. Presenting some of the most unusual yet some of the most popular dishes that are being served in restaurants currently:

Gulab jamun cheesecake

Served in restaurants, both routine and fine dining, this dessert is perfect for those who can’t pick a favourite.

Where it’s served: Le Meridien outlets all over the country, MTV@Flyp Cafe, and Ruha, Mumbai

Try it because: “It has the right amount of sweet and is the perfect blend of flavours,” says chef Kunal Kapoor.

Maggi pizza

Where it’s served: Woodbox Cafe, New Delhi and Hungry Head, Mumbai

Try it because: “It sounds like the perfect snack. You can’t go wrong with these two dishes,” says food blogger Neeru Singh

Chocolate momos

Momo lovers have managed to convert the appetiser into a dessert too! Though we’d advise caution for this one.

Where it’s served: Wow! Momo outlets in Kolkata, Kochi and other cities

Try it because: “Chocolate works with almost everything. Though everyone will react to this experiment in their own way,” says chef Kunal.

Dahi Bhalla Ice cream

The Italians didn’t see it coming, nor the Punjabis. But this dessert is a hit in Gurugram kitchens.

Where it’s served: Prankster, Gurugram

Try it because: “This is better than the local dahi bhalla options any day,” says chef Kunal.

Butter chicken pasta

Ever thought of combining these two cuisines? Luckily someone did! The result is this super hit in the capital.

Where it’s served: The Village Cafe, New Delhi

Try it because: “This is a no-brainer hit. Pasta works well with any tomato-based sauce, especially this desi version,” recommends chef Kunal.

Nutella Paranthas

Mumbai’s late-night delivery favourite, this one’s an instant mood changer.

Where it’s served: Oye Kiddan, Mumbai

Try it because: “We’ve been doing paranthas with jaggery for years now. Everyone loves chocolate and you can use healthier alternatives for the roti base,” says chef Amrita Raichand.
