How to make Dhokla at home

Get going: In a large bowl, mix gram flour, 1 tbsp. oil, lemon juice, sugar, yogurt, ginger paste, turmeric powder and salt. Add a little bit of boiled water to make the mixture into a thick paste. Once the mixture turns into thick paste, add your soda/fruit salt and mix well.Steam time: Pour the Dhokla mixture into a square steaming vessel and steam for about 10 minutes. You’ll know the Dhokla is done when you touch the top and your finger comes away clean.

Cool it: Allow the steamed Dhokla to cool slightly and cut into 2" squares.

Fry it out: To temper, heat the oil in a wide, thick-bottomed pan and add the curry leaves, mustard and sesame seeds and green chillies. Fry till the seeds stop spluttering or crackling. Pour these into warm water. Sprinkle this mixture all over the prepared Dhokla. Keep aside for 10 minutes.
