Describing the dish, he wrote in the caption, “Tomato rice is one of those comforting, fuss-free meals that comes together with simple ingredients and tastes absolutely delicious. Fragrant rice cooked with juicy tomatoes, everyday spices and a little heat, this is perfect for a quick lunch, an easy tiffin or even a satisfying weeknight meal. It’s wholesome, flavourful and requires minimal effort — exactly the kind of recipe you want to keep coming back to!”

- Oil – 3 tbsp
- Asafoetida (hing) – 1 tsp
- Dry red chilli – 4
- Bay leaf – 1
- Cinnamon – 1 pc
- Cloves – 4
- Cardamom – 4
- Mustard seeds – 2 tsp
- Cumin – 2 tsp
- Chana dal – 1 tbsp
- Urad dal – 2 tsp
- Garlic – 1 tbsp
- Ginger – 1 tbsp
- Green chill, chopped – 1 tsp
- Curry leaf – 1 sprig
- Cashew nuts – handful
- Onion, chopped – ¾ cup
- Tomato, chopped – 2 cups
- Salt – to taste
- Turmeric – ½ tsp
- Red chilli powder – 1 tbsp
- Coriander powder – 1 tbsp
- Water – 1½ cups
- Rice – 1 cup
- Coriander stems, chopped – 1 tbsp
- Mint leaves – a handful
Method of preparation
- To prepare tomato rice, start by heating oil in a pan. Add hing, dry red chilli, bay leaf, cinnamon, cloves, cardamom, mustard seeds, cumin, chana dal, urad dal, garlic, ginger, chopped green chilli, curry leaf, and cashew nuts. Sauté until the nuts are golden and the spices release aroma.
- Add chopped onions, cook until translucent, then add tomatoes, salt, turmeric, red chilli powder, and coriander powder. Cook until the tomatoes are soft.
- Add washed rice, coriander stems, mint leaves, and water. Cook until the rice is done. Garnish with fresh coriander leaves. Your flavorful tomato rice is ready to be enjoyed!
