  • Fresh moringa (drumstick) leaves – 2 cups (loosely packed)
  • Onion (finely chopped) – 1 small
  • Garlic (finely chopped) – 2 cloves
  • Oil – 1 tablespoon
  • Mustard seeds – ½ teaspoon
  • Urad dal – 1 teaspoon
  • Dry red chilli – 1
  • Curry leaves – 8–10
  • Turmeric powder – ¼ teaspoon
  • Salt – to taste
  • Grated coconut – 2 tablespoons (optional)

Instructions

  1. Remove the moringa leaves from the thick stems and wash them thoroughly.
  2. Heat oil in a pan and add mustard seeds.
  3. Once the mustard seeds splutter, add the urad dal and the dry red chilli.
  4. Add curry leaves and chopped garlic; sauté briefly.
  5. Add chopped onion and cook until soft.
  6. Add moringa leaves, turmeric, and salt.
  7. Stir well, cover, and cook on low flame for 5–7 minutes.
  8. Stir once or twice until the leaves are tender.
  9. Add grated coconut if using and mix well.
  10. Serve warm as a side dish with rice or millet.
