Often dismissed as a decoration or garnish, radishes are actually delicious vegetables, full of potassium, vitamin C, folate and fibre.
Plain and fancy Summer radishes can be bold red, pink, purple, white or red; they may be globe-shaped or elongated, hot or mild;eat them when they are small and tender
Winter radishes can be white, green or black; the Japanese daikon, meaning “great root,” is in this category; choose large, mature ones
In addition to salads, radishes can be used in pasta dishes and as a bed for grilled fish or meats
For a delicious sandwich, put thinly sliced radishes between two slices of good bread spread with sweet butter or creamy cheese
