Indian flavours once again woo the global palate. Australian celebrity chef Christine Manfield’s recipe book — Tasting India — has been named the ‘Cookbook of the Year’ at the noted International Association of Culinary Professionals Awards in New York.
The cookbook includes 250 regional Indian recipes. Manfield is ecstatic about the win. “I am thrilled, euphoric in fact. It’s amazing,” she says. Talking about her love affair with Indian cuisine, she shares, “I have been travelling to India since 1996. Tasting India took me five years to write. I wanted to showcase the amazing diversity of regional Indian food and its nuances to the world.”
The recipes in the book include Punjabi spiced chickpeas, dal stuffed pastries and kingfish steamed in banana leaf. Manfield collected the recipes from local people she met during her visits to the country. “Indian food has infinite universal appeal that makes it a global hit,” believes the chef.
