These quaint little fluffy rice cakes might hail from southern India but they are definitely gaining popularity worldwide. Idli is a savory cake popular throughout South India, which is usually two to three inches in diameter and the preparation process is quite simple. The variety can be endless and as exotic as olive idlis, herb idlis, pistachio, almond, cashew, carrot, curd, tender coconut idli, fruit idli, spicy and pepper idli and many more.
