In an interview with HT Lifestyle, Paweena Withyasathien, co-founder and Master Chocolatier, Savorworks Coffee and Chocolate, shared few things to look for when choosing premium chocolate.

Premium chocolate makers carefully source their beans from regions known for producing high-quality cacao. Factors such as climate, soil, and post-harvest processing all influence the flavour of the beans. Instead of tasting overly sweet, premium chocolate often reveals natural notes of fruits, nuts, spices, caramel, or even floral hints.

“One of the easiest ways to identify premium chocolate is by reading the ingredients," said Paweena Withyasathien. High-quality chocolate doesn't rely on artificial flavours, preservatives, or unnecessary fillers. Instead, it contains simple ingredients such as cocoa mass, cocoa butter, and sugar. Some milk chocolates may also include milk powder, but the ingredient list should remain clean and straightforward. The fewer unnecessary ingredients, the more the natural flavour of cacao can shine.

If you want chocolate that melts evenly and feels rich on the palate, real cocoa butter is essential.

Making premium chocolate is a craft that requires time, skill, and precision. Every stage from roasting the cacao beans and grinding them into chocolate to refining, conching, and tempering plays a role in creating the final product. Proper roasting enhances the beans' natural flavours, while refining and conching improve texture and remove unwanted bitterness. Tempering gives the chocolate its glossy finish and satisfying snap.

The quality of chocolate can often be seen before it's even tasted. Premium chocolate has a smooth, glossy surface and breaks with a clean, crisp snap. Once it melts in your mouth, it should feel silky and creamy rather than grainy or waxy. These characteristics indicate careful craftsmanship and proper tempering, both of which are hallmarks of premium chocolate.
6. Flavour that goes beyond sweetness
Perhaps the biggest difference between premium and ordinary chocolate is its flavour. Instead of simply tasting sweet, premium chocolate offers layers of complexity.
