Ingredients: (Serves 2 )
Olive Oil - 2 Tbsp.
Broccoli Florets (Blanched)
Diced Beetroot - 1 Cup
Diced Asparagus
Thyme - ¼ Tsp.
Salt - To taste
Pepper - To Taste
Ranch dressing:
Low Fat Yogurt - ½ cup
Chopped Parsley - 1 Tsp
Chopped Garlic - ½ Tsp
Salt - To Taste
Black Pepper - To Taste
Lemon Juice - 1 Tsp
Boiled Chickpeas - ¼ cup
Boiled Brown Rice - 2 cups (White rice can also be used)
Garnish:
Sprouts - 2 Tbsp
Pumpkin seeds - 1 Tbsp
Parsley chopped 1 Tsp
Method :
1) Heat olive oil in a pan and sautee vegetables, add thyme and season with salt & pepper, transfer to a bowl & let it cool.
2) For Ranch dressing take a mixing bowl whisk together Yogurt, chopped parsley & garlic, until smooth. Check for seasoning & finish with lemon juice & keep aside.
3) Add the brown rice to the Sautee vegetable , pour over the dressing & toss well. Check for seasoning.
4) Serve chilled with some Sprouts, Pumpkin Seeds and parsley on top.
