Spinach Idli

1 cup idli batter
1.5 cups spinach leaves
2 mild green chillies
Salt to taste
Few drops of ghee

For chutney:
Two tbsp grated coconut,
chana, tamarind,
ginger and water

Preparation time: 15 mins
Cooking time: 10 mins

Method :
Wash and grind the spinach and a green chilly.
Add this puree to the idli batter. Add salt.
Now grease the idli moulds with ghee.
Add a few tbsps of batter in the moulds. n Place the idli stand in the steamer.
Steam for eight minutes and leave it for two mins to cool.
Now remove carefully with the spoon.

Grind coconut, chana, water, tamarind, ginger and salt together and remove in a bowl.
Temper with rai and curry leaves. Serve hot spinach idli with this chutney.

Poha Tikki

2 cups poha
2 medium boiled potatoes (grated)
1 onion (sliced)
3-4 green chillies (chopped)
½ tsp mustard seeds
1½ tsp oil
3-4 curry Leaves (Kari Patta)
1 tsp Turmeric powder
Salt to taste

Preparation Time: 6-7 mins
Cooking Time: 10 mins

Wash and drain poha.
Heat oil in a pan.
Add mustard seeds and kari patta. Then add onion and fry it till it is light brown.
Add chillies, turmeric, salt and saute it.
Add poha and cook it for 2 minutes.
Add the grated boiled potatoes and mix it well. Make small tikkis of the mixture.
Sprinkle a little oil on a non-stick pan. Fry the tikkis till they are light brown on both sides.
Serve hot with tomato sauce.

Dates Pancake

1 cup flour
½ cup oats
5 tbsp chopped dates
2 tbsp raisins
2 tbsp walnuts
2 tbsp cashew nuts
1 egg
½ cup milk and water

Preparation time: 10 mins
Cooking time: 10 mins

Method :
Take a bowl. Beat eggs and milk.
Add flour, dates, oats, raisins, walnut and cashew nuts.
Keep it this way for 2 minutes.
Take a non-stick pan and pour one serving spoon of the mixture.
Take ½ tsp of butter and mix it along with the pancake.
Cook both sides evenly and serve warm.
Top it with chocolate sauce f desired.
