Here’s the full recipe -

Ingredients:

• Semolina puff (pani puri) 16pcs

• White peas dry 100gms

• Tomato 50gms

• Onion 50gms

• Green chili 15gms

• Green coriander 10gms

• Lemon juice 10ml

• Chat masala 5gms

• Yogurt 80gms

• Sugar 20gms

• Potato boiled 100gms

• White chickpeas small 60gms

• Black salt 5gms

• Salt to taste

• Cumin powder 5 gms

• Tamarind chutney 50gms

• Mint chutney 50gms

• Beetroot julienne 10gms

• Ginger 10gms

• Beetroot cress 5gms

• Mustard cress 5 gms

• Pomegranate seeds 40gms

Method:

Boil the white peas and small chickpeas separately. Drain the water and refrigerate.

Then add black salt, chop onion, tomato, chili, chat masala and lemon in white peas.

Mix boil potatoes with small chickpea, add green coriander, salt and cumin powder.

Plate white peas in the platter keep semolina puff on top.

Break the puff to make a pocket on top and fill with boiled potato & chickpea mixture.

Fill the puff with tamarind chutney, green chutney and sweet yogurt. Garnish with pomegranate seeds, cress, ginger juliennes and beetroot julienne.
