Ingredients:
(Serves 2)
Olive oil 02 Tbsp
Mustard seeds ½ Tsp
Curry leaves 4-5
Roasted peanuts 2 Tbsp
Garlic ( Chopped) ½ Tsp
Ginger (Finely chopped) ½ Tsp
Onion( Chopped) ½
Green chili (Chopped) 1 Tsp
Cumin powder ½ Tsp
Turmeric powder ½ Tsp
Tomato (diced) ¼ Cup
Quinoa (cooked) 2 Cups
Salt To Taste
Lemon 2 Tsp
Coriander( Chopped) 2 Tsp
Method :-
1. Heat oil in a deep non-stick pan. Add mustard seeds & curry leaves and cook till the seeds begin to splutter. Stir in the peanuts and cook until peanuts turn golden brown.
2. Add garlic , ginger , onions and cook till the onions turn translucent , add Chopped green chili , cumin powder, turmeric powder. Saute till the dry spices release their flavour.
3. Add tomatoes, cover to cook on medium heat till tomatoes are tender.
4. Stir in the cooked quinoa and mix well. Cook for 2 minutes, remove from heat and drizzle the lemon juice. Add salt to taste and serve hot in a bowl with parsley on top.
