CHEESE GARLIC BREAD
Ingredients:
1 long bread roll; 3 garlic bulbs; 100g butter, softened; Handful of parsley, finely chopped; Parmigiano reggiano, grated; Salt and pepper, to taste
Method:
- Put the garlic in the air fryer or bake it in the oven at 190°C for 40-45 minutes or until the bulbs are golden brown and soft.
- Squeeze out the garlic and mix it with butter, parsley, Parmigiano reggiano, salt and pepper.
- Spread the mix on the bread and bake for 10-20 minutes at 190°C or until golden brown and serve hot with your choice of dip.

CHOCOLATE CHIP COOKIES
Ingredients:
1/2 cup butter; 1/2 cup castor sugar; 3/4 cup brown sugar; 1/4 cup icing sugar; 1 egg + 2 egg yolks; 1 tsp vanilla essence; 1 + 1/2 cup all-purpose flour; 1 tsp baking powder; 1/4 tsp baking soda; 1/2 tsp salt; 200gm chocolate chips
Method:
- In a bowl mix the butter, castor sugar, brown sugar and icing sugar.
- Add in the eggs and egg yolks, vanilla extract, flour, baking powder, baking soda, salt and mix it.
- Add chocolate chips into the dough.
- Make small balls and bake at 180°C for about 12-15 minutes and enjoy.

RED PEPPER PASTA WITH GARLIC BUTTER MUSHROOMS
Ingredients:
2 portions spaghetti, boiled; 4 mushrooms; 2 tbsp butter mixed with 1 tbsp freshly chopped parsley, 1 clove minced garlic, handful of cheese; Salt and pepper, to taste
For sauce: 2 roasted red peppers; Handful of cashews; 25gm fresh basil or parsley; 1 tbsp olive oil; 1 heaped tbsp nutritional yeast; 1 tbsp smoked paprika; Large pinch salt and pepper
Method:
- Stuff the butter mix inside the mushrooms and bake at 200°C for around 20 minutes.
- Mix the sauce ingredients in a blender.
- Mix the sauce with the pasta on low heat.
- Season generously, add roasted mushrooms on top and enjoy.

PRAWN MALAI CURRY
Ingredients:
5-6 peeled prawns
For marinating: 1/2 tsp salt; 1/2 tsp green chilli; 1/2 tsp ginger paste
For curry: 2 tbsp mustard oil; Bay leaves; Green cardamom; 3-4 tbsp onion paste; 1 tbsp coconut paste; 1 tbsp tomato paste; 2 cups coconut milk; 1 tsp garam masala
Method:
- Coat the peeled prawns with a mix of the marinating ingredients and keep aside for 20 minutes.
- Sauté the prawns in mustard oil for 2-3 minutes.
- Heat mustard oil in a pan. Add bay leaves, cardamoms, onion paste, coconut paste and the tomato paste. Let the ingredients roast.
- When it changes colour, add some water. Add in the prawns.
- Add coconut milk and finish it off with garam masala.

SHAHI TUKDA
Ingredients:
3 slices bread; 1 tbsp ghee
For rabri: 0.5 litre whole milk; 1 to 1.25 tbsp sugar; 1.5 tbsp milk powder; 0.13 tsp cardamom powder; 0.5 tbsp masala milk powder; 1 tsp rose water; 6 to 7 saffron strands
For Sugar Syrup: 1/4 cup sugar; 1/3 cup water; 1/3 tsp cardamom powder; 1 tsp rose water
For garnish: 6-7 almonds, blanched and sliced; 6-7 saffron strands; 5-6 pistachios, blanched and sliced
Method:
- Slice off the crusts of bread and cut into any shape of choice.
- Fry the bread slices on medium-low flame in ghee. Brown both sides and drain the slices on paper towels.
- Sugar Syrup: Mix sugar and water in a pan. Keep the sugar solution on low heat.
- Cook it to one-thread consistency. Switch off the heat and add cardamom powder.
- Rabri: In a sauce pan, boil the milk. Add milk powder and masala milk powder.
- Keep scraping the dried milk from the sides and add them back to the milk.
- Switch off when the milk reduces to one-third of its volume. Add sugar and stir well. Add crushed saffron and rose water.
- Dip the bread slices in the sugar syrup.
- Arrange the soaked bread slices neatly in a serving tray.
- Pour the rabri on top and garnish with sliced almonds and pistachios.
