The month of Shravan has begun and so has the time to experiment with certain foods. Most people stay away from non-vegetarian food this month and explore various vegetarian cuisines. City chefs have also decided to make the most of this and present an exclusively vegetarian spread.
The month of Shravan is considered to be sacred as iyt is the birth month of Lord Shiva. Most people fast for either the entire month or on specific days. Sushant Ghorpade, chef de partie, Courtyard by Marriott Pune Chakan, says, “With Shravan comes the responsibility of cooking something that is appetising and healthy. The Shravan Special Thali offers balanced food while keeping the taste and health factor intact.”
Vikram Gakkan, corporate chef, Malaka Spice Group, says, “This year, our monsoon seasonal menu is called Spice Temple, a Shravan special menu. It is inspired from the temple cuisine of Southeast Asia. It’s been our endeavour to serve our guests with food that is honest while maintaining the integrity of the ingredients used. A lot of research has been done on the food made in the Buddhist monasteries, and we found our inspiration from there.”
Sagar Deshmukh, owner, Marathi Samrat shares that most of the Shravan specialities are inspired from old-age village recipes, in which each ingredient used is said to nourish the body. Deshmukh says, “The flavours are at par with any non-vegetarian dish one would enjoy and definitely are not to be missed this Shravan.”
1. Kache Kele Ke Kebab
What: Raw banana is mixed together with roasted peanuts, green chilies and cilantro and deep fried, roasted in a tandoor or pan seared as per your taste.

2. Jaew Mak Khua
What: It is a simple salad made from smoked eggplants that are grilled over a charcoal grill with lemon, cilantro and red chilies. It is served with crisp bread sticks.

3. Shravan Special Thali
What: This thali includes puranpoli, poori, Vangyachi Bhaji (brinjal curry), Shravan Ghevda Bhaji (French Beans), Subzi Kurma, Varan (Dal), Phandhara Bhat (White Rice) with Tup (Ghee), Sabudana Pattice and Amrakhand

4. Sabudana Wada
What: A popular Maharashtrian snack made using sago also called tapioca pearls, widely eaten while fasting or for breakfast. It can be eaten with a yoghurt dip or a spicy chutney.

5. Aloo Sabudana khichdi
What:A healthy and satiating meal, sabudana khichdi with potato is one of the most popular breakfast and fasting picks.

6. Varhadhi Shev Bhaaji
What: A traditional onion-tomato gravy flavoured with authentic varhadhi spices and topped with crunchy sev. This one’s a must try for spice lovers.
