Chefs turn waste food into meals for homeless

Besides getting the thumbs up from the Olympic Village for their culinary skills, Bottura and his team are getting accolades for turning waste into the best through “Refetto Rio Gastromotiva”, a project aimed at serving impoverished residents.
A team of international chefs has been serving thousands of meals daily to the underprivileged using surplus ingredients that would otherwise head for the bin. In fact, renowned chefs like Alain Ducasse, Virgilio Martinez Veliz and Joan Roca are among the 50 who have signed up for kitchen shifts.
But for Bottura, the acclaimed chef and owner of Osteria Francescana, one of Italy’s best restaurants, “it’s not just about feeding people but is about social inclusion and teaching people to avoid food waste”.
