Now that’s a tricky one for many! While ordering this rice dish from Valencia, Spain, should you ask the waiter for pa-ell-aa, pa-ey-aa or pa-ey-yah? We decided to approach Chef Ravi Saxena of The Claridges for the correct pronunciation. “It is pa-ey-aa,” comes his quick reply. “Both the Ls are silent.”
