The rain calls for some comfort food, and what sounds better than something warm, gingery, spicy, and soupy? But while looking for a comfort dish, it is also important to keep your macros in check. On August 2, Saloni Kukreja, a food content creator and chef, posted a detailed recipe for making steamed ginger chicken rice.
Sharing the recipe, she wrote, “This might just be the juiciest chicken you’ll make all week. Steamed until perfectly tender and finished with an irresistible ginger and scallion flavour that takes it to the next level.”
The dish comes with a flavourful broth that might warm you up in no time during the monsoons, and it takes just minutes to prepare. Here are all the ingredients and steps needed to make the dish:
Ingredients
400g Chicken breast
7 to 8 slices of ginger
2 stalks green onion
Salt to taste
6 cloves garlic - minced
1/2inch thumb ginger - grated
1 stalk - green onion whites
1 tsp chilli flakes
2 tbsps oil
1 stock cube
Salt and white pepper to taste
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice wine vinegar
1 tsp sesame oil
1 tsp sugar
Rice to serve
Green onion and sesame seeds to garnish
Method
Step 1: In a pot, place a small stand with a plate. Place the chicken breasts on it, along with slices of ginger and green onion stalks. Add salt for taste.
Step 2: Cover the pot with a lid and steam the chicken until cooked and tender inside for about 15 to 18 minutes.
Step 3: Take it off the heat and reserve the stock.
Step 4: In a plate, add all the ingredients, including minced garlic, grated ginger, chopped onion, chilli flakes, stock cube, and sugar.
Step 5: Heat the oil well and pour it over the top of the chicken. Add in the soy sauce, oyster sauce, rice wine vinegar, and sesame oil.
Step 4: Shred the chicken breasts and mix well with the prepared sauce and reserved stock from the pot.
Step 5: Serve the prepared chicken with steamed rice garnished with sesame seeds and green onion greens.
