In the men's final, England's Nick Matthew beat compatriot James Willstrop 11-6, 11-7, 11-7 to make it three medals for their country in the singles event.
Third seed Peter Barker beat Malaysia's Azlan Iskandar to claim bronze medal. The Englishman won in straight games, 11-5, 11-4, 11-2 in 42 minutes.
Earlier, Alison Waters pulled out of the third place playoff against sixth seed Kasey Brown with an achilles injury, handing over the bronze medal to the Australian.
"I'm so excited right now, it's wonderful," said Nicol. "Jenny didn't play her best today but I had to take my opportunities."
