Udupi Cuisine: Deriving its name from the southern state of Karnataka, Udupi cuisine drives the cuisines of Karnataka. The masala dosa being its most famous offspring, items as Saaru, spiced rice and chutney are equally popular.

Malabar Cuisine: Originating from northern Kerala, Malabari cuisine is pretty much non-spicy. But it has a wide variety of non-veg items with prawns and mutton, which are delectable with Malabari porotha.

Tamil Cuisine: Curry leaves, tamarind, coriander and coconut — these are vital parts of Tamil cuisine. Idli appam, uthappam all hail from here.

Konkani Cuisine: Goa and parts of Maharashtra are a treasure-house of seafood and non-veg items.
