A dhaba that makes nothing but pakoras can survive for 50 years only on goodwill. It has plenty of it, because of the dozen-plus kinds of pakoras it dishes up. The varieties include lotus stem (kamal kakri), chillies filled with a sour chutney, ground chana dal and spicy mashed potato, in addition to more conventional varieties like paneer, spinach and onion. Ultra-fresh besan and inspired fillings give the pakoras a distinctive edge despite the grotty surroundings.
