How can I make crispy French fries at home?

Peel and cut potatoes into slightly thicker than matchstick strips. Rinse them in cold water. Pat them dry. Boil them for two to three minutes and as soon as you remove them, add some cornstarch. Due to the heat, the cornstarch will make a layer on every French fry. Freeze them for a bit. When you remove them, you’ll be able to see a layer of cornstarch on top. Slow fry them till they are golden brown and cooked in the centre.

Can I source truffles as an ingredient when I cook at home?

There are many vendors from whom you can source and buy truffles in metro cities. The time to use truffles is when it’s in season and you can buy them fresh. I’m not a big fan of truffle oil and paste because they are quite synthetic with no truffle and only the essence. I would rather wait for the season. There’s no substitute for truffle, but you can use Kashmiri morels.
