Ingredients

  • 200g spaghetti
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 5 to 6 cloves garlic, finely chopped
  • 1 to 2 fresh red chillies, finely chopped
  • ½ tsp chilli flakes
  • 1 tsp mushroom broth powder (or as required)
  • 1 cup mixed vegetables of your choice, chopped
  • Salt, to taste
  • ½ cup cream
  • ½ tsp freshly cracked black pepper
  • ½ to ¾ cup grated Parmesan cheese
  • ¼ cup green olives, sliced
  • ¼ cup Kalamata olives, sliced

Method

  1. Heat butter and olive oil in a large pan over medium heat.
  2. Add the chopped garlic, fresh red chillies and chilli flakes. Sauté until fragrant, taking care not to burn the garlic.
  3. Stir in the mushroom broth powder, ensuring it combines well with the aromatics. This adds a rich umami flavour to the pasta.
  4. Add the spaghetti, followed by the chopped vegetables and salt. Pour in enough water to cook the spaghetti and bring to a simmer.
  5. Cook until the spaghetti is almost done and the liquid has reduced, stirring occasionally to prevent it from sticking.
  6. Stir in the cream during the final three minutes of cooking and allow it to coat the pasta.
  7. Turn off the heat and add freshly cracked black pepper, grated Parmesan, green olives and Kalamata olives. Toss well until the cheese melts and the sauce becomes creamy.
  8. Serve hot and enjoy the creamy, cheesy, garlicky and spicy pasta.
