During the icy cold season, when the Kashmir valley is completely snowed down and the main highways are blocked and trucks ferrying essential commodities are stranded en route, locals are not starved for vegetables as they have a good stock of dried green staple. The indigenous art of drying and preserving vegetables Hokshun is still prevalent in the valley. Dried bottle gourds, tomatoes, brinjals, spinach and turnip with leaves can be easily found in the markets.
