Kunal Kapur shares an easy, zingy dal preparation to make when you do not feel like having lentils the regular way. 

Dal is one of the most common ingredients found in desi kitchens and is almost a staple across meals. But if you are bored with preparing it the usual way, celebrity chef and MasterChef India judge Kunal Kapur has a new recipe for you to try.

Taking to Instagram on August 21, the chef shared the recipe, writing in the caption, “Is wali chutney mein dal ko roast karke, masalon aur mirchi ke saath grind karo - and bas, boring khana instantly interesting! Crispy, spicy, thodi nutty aur full desi vibes. Roti, dosa, idli, paratha… honestly, sabke saath iska rishta serious hai.”

The detailed steps to make the dish are presented as follows.

Ingredients for dal ki chutney

  • Oil - 2 tbsps
  • Asafoetida (hing) - ½ tsp
  • Dry red chillies - 3
  • Bengal gram (chana dal) - ¼ cup
  • Ginger, chopped - 1 tbsp
  • Curry leaves - handful
  • Turmeric powder - ½ tsp
  • Coconut, grated - ½ cup
  • Tamarind paste - 1 tbsp
  • Salt - to taste
  • Water - ½ cup

For tadka

  • Oil - 1 tbsp
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Black gram, split - ½ tsp
  • Curry leaves - handful

Method of preparation

  1. Set a pan on the flame. Add oil to it, and when it heats up, add hing and dry red chillies. Let the spices splutter, then add chana dal. Keep cooking the dal on a low flame until it gets a nice brown hue.
  2. Then add chopped ginger and curry leaves to the pan and saute them well. Next, add turmeric powder, give it a stir, and take the pan off the heat.
  3. After the dal cools down, pour the contents of the pan into a mixer grinder. Add grated coconut, tamarind paste, salt and a dash of water. Blend it into a smooth paste. Pour the paste into a bowl.
  4. Now prepare the tadka. Heat some oil in a pan, and add to it mustard seeds, cumin seeds, black gram, and curry leaves. Stir them well and then pour it on the prepared dal paste.
  5. The dal chutney is ready to serve.
