Once in a while, everyone has to face the trouble of doing away with overripe bananas. For many, it is not the most appealing of foods, and thus, the best way to avoid throwing it in the bin is to use it in a recipe.

Celebrity chef Sanjeev Kapoor shared one such recipe on his blog, the banana and chocolate chip muffins. Soft, moist and absolutely delicious, the muffins take approximately 30 minutes to make. The detailed instructions to prepare them are presented as follows.

Ingredients for banana and chocolate chip muffins

  • 3 medium ripe bananas
  • 1½ cup chocolate chips + to sprinkle
  • 1¹½ cups almond flour
  • 2 eggs
  • 2 tablespoons melted butter
  • 1½ cups almond milk
  • 3 tablespoons castor sugar
  • 1/2 teaspoon baking powder
  • A pinch of salt

Method of preparation

1. First, preheat the oven to 180° С.

2. Take the overripe bananas. Peel them and transfer them to a large mixing bowl, and mash them well.

3. Take two eggs and break them directly into the mixing bowl with the mashed bananas. To the bowl, add melted butter, almond milk and caster sugar. Whisk all the ingredients well.

4. Now, take almond flour and sift it directly into the banana mixture. To the mixture, add baking powder and salt.

5. Add half a cup of chocolate chips into the mix. Whisk everything well.

6. Transfer the mixture into muffin molds lined with cupcake liners, then sprinkle more chocolate chips on top.

7. Keep the moulds in the preheated oven and bake for 25 minutes.

8. Bring the moulds out of the oven and allow the muffins to cool. The banana and chocolate chip muffins are now ready.

9. Demould the muffins, arrange on a serving platter and serve.
