Ask a Parsi what they plan to do on New Year’s Day and they will tell you: not much, visit the agiary in the morning and have a bhonu (feast).

Here are six items from a Parsi bhonu today.

Ravo: Semolina (rava) cooked in ghee and garnished with nuts and dried fruits. This is served as breakfast.

Chicken Farcha: The frilly Parsi version of the fried chicken is served as a starter. Marinated chicken fried in a batter of eggs and bread crumbs.

Dhan Dar: Rice and yellow dal, served with fish patio, a curry, usually prawns in a vinegar-steeped gravy.

A Sali boti: A thick mutton curry, flavoured with tomatoes, onions, and vinegar. It is topped with fried potato straws.

Patrani Macchi: Fish, usually a white fish like pomfret, stuffed with green coriander paste and steamed in banana leaves.

Pulao: Saffron-flavoured rice, with mutton kebabs on the side and topped with sliced boiled eggs. Parsis in Mumbai get the saffron from the Kashmir Government Arts Emporium in Fort or from relatives visiting Spain or Iran.
