Samosa sutra: A look at the varied puff pastries across Delhi

The commonplace samosa, or the puff pastry, has suddenly become a snack fit for Gods, after the news that it has cost Uttar Pradesh exchequer nearly 9 crore in the past four years. And our own Delhi government has spent close to a crore in the past 18 months. So if you want to enjoy this now- not-so-humble snack in all its glory, HT City takes you on a gastronimical ride in the Capital.

From pasta samosa to a Japani, keema, chocolate, chowmein, pizza there’s innovation a plenty.

Japani Samosa

It started in Lahore in 1924 by Lala Manohar Shah, and then came to Old Delhi during the partition of India and Pakistan in 1947. Continuing the legacy here in Old Delhi, Umesh Kumar has been selling Japani samosas since 1949. It is one of the most complex samosas with 60 layers of flour and potato filling. The Japani samosa is served with pindi chhole, pickle and is priced at Rs 15.

“We prepare our own spices to keep it special. Lot of shops in Chandni Chowk are selling samosas under my banner but to avoid confusion, I have registered its name now,” says Umesh Kumar.

Keema Samosa

Even though Keema samosa is a special delicacy of Ramadan, you can get it on request. “We prepare it during the festive season, and sell it at comparably cheaper rates. One samosa costs us Rs 30 but we sell it at Rs 15. One can order them on request and extra charges apply,” says Mohd. Shaan, owner, Kallan sweet shop. Served with special chutney, the shape of the samosa is similar to the traditional sweet — gujiya.

Malai paneer, white sauce pasta, soya chap and pizza....nope this is not the menu of a food joint. These are the types of samosas available at Kumar Samose Vala. S K Bhayana, the owner of the business, has been selling these delicious puff pastries for over eight years.

He says, “I have had a fascination with samosas since childhood. I thought of doing experiments with them and came up with more than twenty varieties. Youngsters really like all these flavours, especially pizza and chocolate samosa.” The good news is, they’re all available at pocket friendly rates, Rs 15 to 30.”
