Designs your food
Molecular gastronomy and elaborate food designs aren’t restricted just to lavish restaurants. This new city culinary studio offers to bring the same to your private parties tooindia Updated: Mar 15, 2013 13:54 IST
Imagine a mozzarella balloon that emanates smoke when popped. Or popcorn served in a shot glass, in liquid form. You don’t have to be at a swanky eatery to see and try such bizarre-yet-fascinating food. Instead, rope in Eat.Drink.Design to cater your next party.Owners Pooja Raheja and Neeraj Sharda will cook up meals on request for anything between two to 200 diners.
They’ll visit you to find out your likes, dislikes and more about the occasion, in order to personalise your experience in terms of food, service and even ambience. For instance, they recently created a red mawa cake stuffed with rasgullas for a Punjabi client who wasn’t too fond of international dessert. “We catered a card party once, and our serving platters were designed like playing cards, with lines like ‘Are you going to lose your money tonight?’ written on the trays,” says Raheja, recalling another instance. “Recently, we made a cake that was designed like a board game. It had eight pies, a spinning wheel, four message cards and four flambéed shots,” she adds.
Their catering service is priced at R1,000 per head, while cakes start at R1,100 (for a kg). A take-away menu is in the works, as is a store from which they will soon operate. We paid them a visit and checked out some of their creations.

Orange: Bell Pepper Mousse with Parsley Foam; Green: Asparagus Mousse with Cranberry Foam; and Pink: Beetroot Mousse with Balsamic Foam; Sharda says the challenge is not in creating the foam, but in creating good flavour combinations.

Dish 4 Grilled Red Snapper in Tomato Broth with Apple Wood Smoke
